Quick Breakfast Bowl for one

The only skills you need for this simple recipy are: cutting, heating and making an egg in any style you like. This dish comes together quickly. I made it right before my flight to use up a leftover egg and feta cheese. It kept me full until I reached my destination.

Ingredients

  • Tin of baked beans, small one person portion
  • 1 egg
  • Feta cheese
  • Bread, Sliced

Optional

  • Hot sauce
  • Crispy fried onion

Instructions

  1. Prepare your egg any way you like, the two simpleste ways are:
    • Boil the egg
    • Scramble the egg in a hot pan
  2. Open the tin of beans and put them in the bowl you want to eat them in
  3. Heat the beans in your microwave, I recommend to heat in 1 min increments. After each minute, stir the beans and taste if they are hot enough for you
  4. Put the egg on top of the beans
  5. Crumble feta on top
  6. Add hot sauce and fried onions if you have them
  7. Eat bread on the side, toast it for easy dipping

Tips

  • Feta adds a nice tang but cheddar or mozarella will also work. Actually, any cheese will do!
  • I add extra veggies when I have them. Some diced bell pepper or carrot for example makes this more nutritious.
  • Add any topics that you have in your fridhe or pantry. A leftover spring onion or a hand full of nuts can add extra flavour and texture.
