This flavourful bean chili adds spice to your week night dinner. Make a big batch to freeze and enjoy a home-made quick meal later.

Ingredients
- Tin of chopped tomatoes (400 gr)
- Tin of beans: red beans, black beans or bean mix
- 1 bell pepper, diced
- 1 red onion, diced
- 100gr corn
- 2tbs dried coriander
- 2ts smoked paprika powder
- 2ts cinnamon powder
- 2tbs cumin powder
- 1tbs garlic powder
- 1tbs spicy chili flakes
- 1ts oil
- 2tbs soy sauce
Toppings
- Sour cream
- Cheddar, shredded
- Guacamole or fresh avocado
Instructions
- Heat up a big pot on medium heat with the oil
- Add the bell pepper and onion, fry for 5 min
- Add the chopped tomato, spices and corn
- Simmer on low heat for at least 10 min
- Add the beans and simmer for another 5 min
Tips
- The longer you can let this simmer, the more delicious it will be
- I use soy sauce instead of salt in recipes with atomato sauce base, it gives a deeper umami flavour
- Serve with rice or tortilla chips
- Serve without cheese or sour cream for a vegan meal
