This recipe is my all time favourite after a busy day in the office. It can be made in a few minutes. The home made tomato sauce and filling potato gnocchi gives instant comfort. If you have extra time, I recommend simmering the sauce for a little longer to lift it to the next level.

Ingredients
- 1 tin of chopped tomato
- 400gr of gnocchi
- 1 bell pepper
- 2 Tbsp soy sauce
- 1 Tsp garlic granules
- 1 Tsp chili flakes
- 2 Tbs italian herbs
- 1 Tsp smoked paprika powder
Instructions
- Add the chopped tomatoes, Italian herbs, garlic, smoked paprika powder and chili flakes to a pot. Simmer on low to medium heat
- Boil a pot on water, add salt to taste
- Once the water boils, turn the heat off and add the Gnocchi
- Cook the Gnocchi following the instructions on the pack, undercooking is better than overcooking
- Add the gnocchi to the pot with your sauce
- Stir and let everything simmer on low heat for a few minutes
- Add the mozzarella after serving
Ways to make it better
- Use fresh garlic and herbs
- Add veggies, I add cubes paprika for crunch and finely chopped onion for flavour
- If you have time, let the sauce simmer on low heat for a deeper flavour. 30 min makes a big difference.
