Comforting gnocchi in a rich tomato sauce

This recipe is my all time favourite after a busy day in the office. It can be made in a few minutes. The home made tomato sauce and filling potato gnocchi gives instant comfort. If you have extra time, I recommend simmering the sauce for a little longer to lift it to the next level.

Ingredients

  • 1 tin of chopped tomato
  • 400gr of gnocchi
  • 1 bell pepper
  • 2 Tbsp soy sauce
  • 1 Tsp garlic granules
  • 1 Tsp chili flakes
  • 2 Tbs italian herbs
  • 1 Tsp smoked paprika powder

Instructions

  • Add the chopped tomatoes, Italian herbs, garlic, smoked paprika powder and chili flakes to a pot. Simmer on low to medium heat
  • Boil a pot on water, add salt to taste
  • Once the water boils, turn the heat off and add the Gnocchi
  • Cook the Gnocchi following the instructions on the pack, undercooking is better than overcooking
  • Add the gnocchi to the pot with your sauce
  • Stir and let everything simmer on low heat for a few minutes
  • Add the mozzarella after serving

Ways to make it better

  • Use fresh garlic and herbs
  • Add veggies, I add cubes paprika for crunch and finely chopped onion for flavour
  • If you have time, let the sauce simmer on low heat for a deeper flavour. 30 min makes a big difference.
